Position Summary
Supervises and participates in the work of preparing a large volume of meats, vegetables, and other foods. Consults with supervisor to determine best methods of preparation for individual food items. Assists in planning menus and devising means of using leftover foods. Prepares special foods for banquets and other occasions. Gives special attention to overall appearance of food prepared.
Knowledge, Skills, Abilities and/or Competencies

  • Thorough knowledge of the materials, methods and equipment used in food preparation on a large scale.
  • Considerable knowledge of health hazards in food preparation and service & knowledge of precautionary measures.
  • Ability to work from written menus and standard recipes.
  • Ability to plan, lay out & assign work to a staff of skilled and unskilled kitchen workers in a manner conductive to full performance & high moral.
  • Ability to keep accurate records of all foods used.
  • Ability to work long hours standing.

Physical Demands

  • Perform physical activity; move loads up to 50lbs, unloading and stocking products
  • Perform push/pull activity with products weighing up to 30lbs;
  • Perform duties with repetitive motion of wrists, arm, and shoulder, possess hand and finger coordination.
  • Able to reach, climb, balance, crouch, twist, crawl, and kneel.
  • Work in noisy, hot/cold environments with chemicals, cleaning equipment, dust, fumes, and odors.
  • Able to work long hours standing.

  • Directs and maintains highest standards of safety and sanitation in assigned areas.
  • Inspects refrigerators and the work of other cooks to prevent food waste.
  • Supervises and participates in the cleaning of kitchen, storeroom, and refrigerators.
